The consumption of the DOP buffalo buffalo mozzarella in the regions in the center and north east in Italy increase. The consortium that groups over 120 dairies that dwell on the protection brand also starts a promotion campaign abroad from over 1 million euros. In 2024 in Italy to tow the consumption of Bufala Dop mozzarella there are Emilia Romagna, Lazio and Friuli.

This is what emerges from the report on the supply chain drawn up by the Protection Consortium and presented within the Study Day ‘Mozzarella di Bufala Campana DOP: future direction’ in Caserta. The analysis of the data collected last year highlighted a production of 55 million 718 thousand kilograms of the Campania white gold, + 0.23% on 2023, with a sprint in the last quarter that has made it possible to recover a year marked by one Series of conjunctures, starting from the difficulties of exports, which went from 38.3% of 2023 to 36.8% in 2024 on the total production.

The foreign countries at the top of the consumption ranking are France (which rises from 29% to 31.8%, absorbing a third of exports alone), Germany (with a share passed from 15.7% of 2023 to 18 , 1% of last year) and Spain (grown from 5.1% to 8.1%).

New entries also overlook the destination markets, such as Norway and Thailand, registered for the first time. Among the countries deemed most interesting for the future, instead, Eastern Europe, Mexico and then the Asian continent, from the Arab Emirates to Singapore and Malaysia appear. “We lived a year in chiaroscuro – explains the president of the consortium, Domenico Raimondo – in the face of difficulties, dictated by the international context and by the consumption crisis, the supply chain, however, managed to hold, with results substantially in line with 2023”. For the director of the Consortium, Pier Maria Saccani “must be resolved some fundamental knots, in particular the restoration of a lost balance regarding the ledge of milk production”. “The data – Saccani highlights – tell us that we continue to produce more milk in the winter months, when the demand falls, and less milk in spring -summer, when instead the request for Mozzarella DOP increases. This imbalance has led to have excessive quantitative of frozen milk, which cannot be used for the PDO, and therefore must also be slowed down with reward mechanisms against virtuous breeders “. For 2025, a promotion campaign in Europe has been ready for over 1 million euros, concentrating resources in strategic markets such as France, Germany, England and the Netherlands. The scenarios that are outlined for the supply chain in 2025, therefore, look first abroad, to spread the knowledge and uniqueness of the product, together with the Consortium for the protection of the DOP buffalo ricotta and in synergy with the ham consortium of San Daniele. For 2025 in the calendar of the Consortium Fair also two stages in the United States for Pizza Expo in Las Vegas and for the Fancy Food in New York.
