Roland and Nicole enjoy their early afternoon routine. Every day, after lunch, the retired couple comes to have their coffee on the terrace of the same establishment, in the 14th arrondissement of the capital. But for some time now, their ritual has changed slightly: the gentleman now pays at the counter rather than at the table. The thing happened naturally. “Ah yes, it’s true, now I’m getting up!” » realizes Roland, 89 years old, when we point this out to him.

“To pay?” It will be at the counter. » Today, the phrase is commonly heard in restaurants, with more and more of them favoring this system for economic reasons. Going to the central cash register allows you to free up a table more quickly, to let the waiter move on to a new customer and, ultimately, to have more profitable days. “People wait to be seated at the table and if the waiter cannot accommodate them because he is busy with other customers, they go elsewhere,” explains a Parisian restaurateur.
