Chili garlic sauce and Vietnamese seasoning sauce are in the top 100 best sauces in the world

Chili garlic fish sauce and seasoned fish sauce ranked 16th and 79th, respectively, in the list of 100 best sauces in the world 2026 by Taste Atlas.

According to the ranking of “100 best sauces in the world” updated by the Taste Atlas culinary guide to January 22, traditional Vietnamese chili garlic fish sauce and fish sauce are on the list. The results are compiled from 15,925 reviews from readers and experts, of which more than 9,700 are valid.

Chili garlic dipping sauce ranked 16th with 4.3/5 points. Taste Atlas describes this as a familiar spice of Vietnamese cuisine, mixed from lemon juice (or vinegar), sugar, filtered water and fish sauce, creating a harmonious sweet and sour taste. Additional ingredients may include garlic, minced chili, red onion, ginger or herbs.

The dipping sauce has many regional variations. The recipe depends on the accompanying dishes. Typically, the dipping sauce is used with fried spring rolls (spring rolls), banh xeo, meat or seafood dishes, as well as with vermicelli, noodles and soups.

Seasoning sauce ranked 79th with 3.9 points, made from fermented anchovies. Compared to other types, seasoning sauce has a stronger and more intense flavor. Seasoning sauce is often mixed with sugar, chili, garlic, lemon juice and indispensable minced pineapple. These ingredients help soothe the smell and enhance the flavor, making them suitable for beef dishes, Taste Atlas suggests.

Topping the list is salsa ocopa, a famous Peruvian sauce originating from the city of Arequipa, with 4.7 points. The sauce is made from fresh cheese, aji amarillo peppers, milk and huacatay (black mint). Traditionally, salsa ocopa is served with boiled potatoes, pasta, meat dishes, fried cassava, and boiled eggs.
